The rural roots of Puglia draw the main lines of the imaginary taste route. Some of the most delicious product of Terra di Bari, cuisine come, in fact, from the farming and breeding excellences. The patience of peasants who follow nature rhythms is rewarded with authentic gifts for the throat. Particulary tasty arethe “zampina” sausage, the horse meat chops dipped into sauce, milk prodigies such as the typical cacioricotta cheese and the delicate and very light primo sale cheese. And directly from land the Queen of Apulia, the olives in their thousands variations: under salt, in brine, fried o juices that turn into extra virgin olive oil. The harvest give the Queen Grapes of Noicattaro and, every autumn, the light inebriation of new wine. In conclusion of this journey  in the taste, the almond cakes from Toritto are recommended.
